I've got some PICKY kids!!!!
I struggle to find things that all 4 of them will eat. Some nights I just have to throw things together and hope for the best. We have this set of Kids Dinner Set by Mainstays, Walmart has them, but you can find them on Amazon as well. The kids like them because their food doesn't touch......
Most meals I serve a fruit or veggie, sometimes something pickled because they are obsessed and yogurt when we have it.
We have meat and a starch at every meal.
I'll share a full grocery run later on but for now here's a week worth of my kid's favorites.
1. Ham and Cheese Hawaiian rolls sliders
It's exactly what it sounds like. We serve this with cold veggies and chips.
Hawaiian rolls, Honey Ham, Provolone Cheese, butter and honey.
Keep the loaf of bread together, slice in half long way, layer ham and cheese.
Mix a tablespoon of butter and a splash of honey, spread on top.
Bake on 350 till cheese is melted.
2. Hitachi Jambalaya
This is one of those throw in the pot and walk away kinda meals
1lb seafood or a pack of andouille sausage
1 can of beef broth
1 can rotel
1 1/2 cup (hitachi cup) raw rice - I use 2 cups when using shrimp
1 celery stalk
1 onion
1/2 bell pepper
1 stick butter
Put everything in the rice pot, stir it good and put it on cook.
3. Shepards Pie
This one has all the things.
Ground beef is what the original recipe calls for, but I like to use fresh chicken sausage.
I start by peeling and boiling my potatoes to make cream potatoes.
I remove the sausage from the casing and brown it till cooked.
1st layer is cooked ground sausage in a 9x11 glass pan
next up is all your veggies, we use can goods but frozen would work as well
corn, carrots and green beans
layer cream potatoes (box stuff works just as good but my kids know the difference)
last step is American cheese.
Bake on 350 till cheese is melted. usually around 20ish minis
4. Pasta Salad w/ Shrimp or Chicken
My kids LOVE this stuff! Sometimes we use this as a side minus the protein
The base is boiled noodles, you can use just about any kind but my kids like the Veggie noodles
Pick your protein Boiled shrimp or Boneless grilled Chicken thighs are usually my go tos but cut up ham or pepperoni are good as well
Cut and add your veggies, I use fresh and usually whatever I have in the icebox, cucumbers, carrots, bell peppers.
Sometimes I add a can of sliced black olives but really you can use just about any veggies your family likes.
I like broccoli but my kids don't, so I usually just skip it.
I coat it well with Olive Garden Salad Dressing. This meal is best when served cool.
5. Fried Steak and homemade French Fries
This is my daughters usual request as her birthday meal.
Beef round eye steak is my steak of choice. It's cheap and perfect for this meal
I start by cutting it into strips against the grain and season it well with Cajun seasoning
I use red potatoes peeled, sliced into strips and soak them in salt water till I'm ready for them.
My batter is super simple, wet batter is a couple scrambled eggs seasoned lightly, dry batter is just as easy it's flour and more Cajun seasoning.
I simply batter both my meat and potatoes using the same batter while frying it in my Presto Stainless Steel Pro Fry which is BOMB might I add! Once it's out of the fryer I lightly season it with salt if needed.
6.Meat Loaf and Cream Potatoes
Such a simple meal but yet so filling.
Ground beef, 2 Cans of Tomato Sauce, light brown sugar, an egg and breadcrumbs. That's it!
I kinda just eyeball everything but I use a 2lb'ish of ground beef, an egg, a regular size can of tomato sauce, and a little bit of breadcrumbs to hold it together, seasoned with Cajun seasoning.
Put it in a loaf pan and bake on 350 for about an hour/ hour & half.
On the stove top mix another can of tomato sauce with 2 tablespoons of light brown sugar cook on low.
For those that have acid issues you can add a teaspoon of baking soda.
When your meat is fully cooked slice it into portions and pour the brown sugar sauce on top.
Bake for another 10 mins. We serve this with Homemade cream potatoes.
7. Tator Tot Casserole
This is another one of those calls for ground beef, but I like to use the fresh Chicken sausage like the shepherd's pie.
Ground meat, can of cream of mushroom, can of corn, frozen tater tots and shredded coby jack cheese
I take the sausage out the casing and brown it good, add cream of mushroom and can or two of corn.
Layer the meat mixture on the bottom of my 9x11 glass baking dish top with frozen tater tots.
Bake using the instructions on the bag of the tots. 5 mins before done top with shredded cheese.
